I can't resist putting this here because it can be made with stuff you buy way ahead of time. i.e. it makes a really tasty "emergency dinner" when you don't feel like shopping (or cooking for that matter).
You can buy the sausages and place the package as is in the freezer, and take it out and thaw it in the microwave for just such an occasion. The pesto (this is the fresh one found in the refrigerated case) keeps a very long time if it's unopened; place it in the back of your cheese bin in the fridge.
* one package Trader Joe's Basil Garlic Sausages (these are uncooked, 5 per pack so buy more if you need to) * one pound box (uncooked) Barilla Angel Hair pasta * one container Trader Joe's Basil Pesto, fresh * one bag of frozen peas or frozen mixed veggies of your choice
Brown the sausages in a pan, then reduce the heat and cook through. You can cover the pan partly to keep it from spattering. It takes about 20 minutes for the sausages to cook through. I always cut one in half to make sure there's no pink in the middle.
Meanwhile, boil the water for the angel hair and start a pot of water for the frozen peas or veggies.
Cook the angel hair...Barilla is the best brand imo because it won't get mushy almost no matter what you do. When the angel hair is tender, drain it and dump it back into the pot. Scoop out the entire contents of the basil pesto container and mix thoroughly into the pasta with a big spoon (this takes some patience to get it all blended in there).
Cook your frozen veggies.
That's it! In 20 minutes to half an hour, you can eat. So it's a serving of one or one-half of a sausage, depending on your appetite, a serving of pesto noodles, and a serving of veggies.
