Leslie's English Scones

Ingredients

2 cups flour
1/2 cup + 1 tsp sugar
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
6 pats or 3/4 cup butter, chilled
5/8 cup buttermilk
1/2-3/4 cup currants or dried cranberries
1 tsp finely grated lemon or orange zest (optional)

Instructions

Preheat electric oven to 450°F. Sift flour, sugar, salt, baking powder, and baking soda into a mixing bowl. Cut in shortening until mixture is the consistency of coarse crumbs. Add buttermilk and currants or cranberries. Form into a ball, handling dough as little as possible. Pat into a large pancake, 3/4-inch thick. Transfer to lightly greased and flour-dusted baking sheet. Cut into 8 wedges and sprinkle lightly with sugar. Separate each wedge slightly so it doesn't touch the next piece. Bake for 12 to 15 minutes or to desired goldeness. Serve with Devonshire Cream if desired.
