Best D**n Chicken Salad Recipe Ever

You're going to laugh at this but it is so easy and simple and it is the best chicken salad you've ever had.
Get one of those rotisserie chickens...Costco has the best one for the price. Go ahead and eat the best parts of the chicken as you normally would.
Now, with the leftover carcass--take all the meat off and get it into bite-sized pieces. Mix it with enough mayonnaise to hold it together, like any other chicken salad.
That's really it. You can add salt and pepper to taste but the thing is, the chicken is already seasoned. You probably don't need to add anything.
Make yourself some toast. The best kind is a Middle Eastern bread...it's that ginormous, oblong-shaped, half-inch-thick, big ol' bread sprinkled with sesame seeds (I think it's an Afghani bread?) that you never know what to do with.
What you do, is cut it up into bread-slice-sized rectangles and put the rectangles in a big plastic bag and put the bag in the fridge.
Okay--so toast a couple slices of the bread. Pile some Best D**n Chicken Salad Ever on top of each slice (you are making an open-faced sandwich here). Add some tomato slices on top of each slice. Enjoy!
